Apple Cake & Custard

Cake Ingredients

  • 120 grams butter (dairy or non-dairy), room temperature
  • 120 grams light brown sugar
  • 1 chia egg or regular egg
  • 150 grams self-raising flour
  • 50g PhycoHealth Phybre
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1/2 tsp clove
  • 150 ml milk or plant-based milk
  • 2 apples, chopped
  • 1 tbsp caster sugar

Method

Preheat the oven to 180 degrees Celsius. Cream together butter and brown sugar until light and fluffy. Mix in the chia or regular egg. Combine flour, Phybre, cinnamon, cardamom, and clove, then gradually incorporate into the creamed mixture alternating with milk. Fold in the chopped apples.

Pour the batter into a greased baking dish, sprinkle with caster sugar. Bake for30-40 minutes or until a toothpick inserted comes out clean.

Custard Ingredients

  • 250 ml milk or plant-based milk
  • 2 tbsp sugar
  • 1 tbsp of custard powder or 2 egg yolks
  • 1 tbsp PhycoHealth Phybre
  • 1 tsp vanilla extract

Method

Heat milk and sugar in a saucepan until just simmering. Whisk egg yolks with Phybre and vanilla in a bowl or 2 tbsp of custard powder. Gradually add the hot milk to the egg mixture, stirring constantly. Return the mixture to the saucepan and heat gently, stirring until the custard thickens. Serve warm with the apple cake. Enjoy a comforting slice of spiced apple cake with a side of smooth, fiber-enhanced custard.
