PB & J Oat Cake Recipe by Karina

PEANUT BUTTER & JELLY OAT CAKES

This turned out so yummy! SAVE this one for a tasty snack slice, or breakfast option.

CAKE INGREDIENTS

  • 2 large Overripe Bananas
  • 2 Eggs
  • 1 1/2 Cups Milk of choice
  • 3 tbsp Phybre
  • 2 tsp Baking Powder
  • 1/3 Cup SF Sweetener
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 2 Cups Rolled Oats
  • 1/2 Cup of Vanilla Peanut Butter Protein

Topping

  • 4 tbsp Smooth Peanut Butter
  • 4 tbsp 100% Strawberry Fruit spread 

Method

  1. Preheat your oven to 180°C
  2. Lightly grease a large baking dish.
  3. In a large bowl combine all the ingredients until well combined.
  4. Pour into the prepared baking dish.
  5. Top with the peanut butter and jam, swirl together.
  6. Bake for 25-30 minutes or until golden and cooked through.
  7. Allow to cool.
  8. Store in the refrigerator covered.

For a breakfast option:

  • Top with vanilla protein yogurt, cinnamon a strawberry 🍓 and an optional drizzle of extra peanut butter.
