APPLE, BLUEBERRY OAT CAKES

3-4 servings

CAKE INGREDIENTS

  • 1 Cup Oat Flour
  • 2 tbsp Phybre
  • 2 tsp Baking Powder
  • 80g Vanilla Protein Powder
  • 1 tsp Cinnamon
  • 1/2 large Apple, chopped
  • 1/2 cup blueberries
  • 1 egg
  • 1 large banana
  • 1 tsp Vanilla extract
  • 1/4 cup liquid sweetener
  • 1-1/2 cup milk

Method

  1. In a medium bowl, mash the banana, add the egg, milk, and vanilla extract and combine well.
  2. Add the dry ingredients, then add the apple and blueberries, gently mix together until well combined.
  3. On a low heat, heat up a large frying pan. Add a little oil then place 1/3 cup amounts of the mixture into the pan. 
  4. Gently cook slow and low, this is a thick batter, cook each side until golden and cooked through. 
  5. Serve with yogurt and extra berries and a splash of maple syrup. Enjoy!
